Everything begins with the harvest
The harvesting of olives is a very delicate phase and in order not to spoil the precious raw material, it can be done through several methods:
Natural method: no type of machinery is used, but only manual tools which facilitate the work. From the browsing, that is the picking by hand directly from the tree; then there is the bapping, which is used when the tree is very large, this method allows us to detach the olives and drop them on designated sheets previously laid around the trees; finally we have the combing, where with special rakes we brush the branches in order to drop the olives on the sheets.
Mechanical Method: here we have the shaking, where a mechanical arm approaches the trunk of the tree, hugs and shakes it, making the olives fall onto the sheet below.
In our case the harvest takes place entirely through the manual procedure and once finished, the olive begins its real journey to become EVO Matrix.
